Hidden Veggie Meatballs

This is the recipe I use to get my VERY PICKY son to eat his vegetables!

- 1 Cup Brussels Sprouts
- 1 Zucchini peeled
- 2 Inches Turmeric Root peeled
- 2 Cups Cauliflower
- 1 Lb Organic Ground Turkey
- 4 Cups Chicken Stock (or bone broth)
- Coconut oil (for hands)
Blend all veggies except cauliflower until smooth. Add cauliflower, then blend again. Add ground turkey & blend again until pureed. Rub coconut oil on hands to prevent sticking, then roll into desired size meatballs or patties. Next, heat 4 cups chicken stock on medium-low heat until simmering. Add meatballs or patties, stir, and cover with lid. Let cook for 10-15 minutes, and enjoy!
